I have a bit of a confession: I don’t usually like banana bread. I know, I know — I can hear the collective gasp from here. But honestly, for years I found it either too dry, too sweet, or just… a bit meh.

That was until this glorious little accident happened. As with most good things in the kitchen, it came about through sheer necessity: three browning bananas, a half tub of coconut yoghurt that needed using up, and a craving for something soft, squidgy, and a little indulgent. What came out of the oven? The only banana bread I’ve ever genuinely loved.

It’s more cake than bread, really. A little sophisticated, not too sweet, and dangerously easy to keep slicing away at until — whoops — it’s suddenly half gone.

What sets it apart is the swirl. Half of the batter gets turned into this deep, rich black cocoa mixture, loaded with white chocolate chunks and crushed Oreos (yes, you read that right). The other half stays golden and plush, full of brown sugar, dark chocolate, and a good spoonful of coconut yoghurt, which keeps it extra tender and dairy-free for me, though sour cream or Greek yoghurt would work beautifully too. Then, as soon as it comes out of the oven, it gets brushed with a glossy brown sugar glaze that seeps into the top like a sticky crown.

This is not your office banana loaf. This is the one you bake when you want a bit of theatre. A bit of indulgence. A bit of “this is for me, thanks.”
