I don’t know about you, but my baking cupboard is a bit of a graveyard for half-used ingredients. A handful of oats from a long-forgotten flapjack attempt, a single overripe banana that’s somehow too far gone for porridge but not quite banana bread-worthy, and a few rogue squares of dark chocolate left in the wrapper (why didn’t I just eat them?). It’s a chaos zone.

But every so often, the baking gods smile upon me, and out of that chaos comes something actually brilliant. That’s exactly how this recipe was born—what I affectionately call my Trash Cookies.

Now, don’t be fooled by the name. These are not the kind of cookies you make when you’ve given up on life. They are rough and ready in the best way possible—a little unpolished, a little Frankenstein’s monster-ish, but trust me, they work. The base? Banana and oats for a little natural sweetness and chew. The middle? A gooey, salted caramel core (because we are still fancy, even in chaos). And the grand finale? The whole thing gets smothered in a rich, snappy dark chocolate shell that makes them dangerously addictive.

They’re the kind of cookie that shouldn’t work, but somehow, magically, they do. Sweet, salty, crunchy, chewy—a little bit of everything, in the best way.

And the best part? They are highly customisable. Got leftover nuts? Throw ‘em in. A bit of coconut? Perfect. I’ve made these a handful of times now, and every batch turns out just a little different—but that’s exactly what makes them special.

These are not your average cookies—they’re the kind of thing you throw together when your baking cupboard is full of odds and ends, but somehow, they turn out completely addictive. The banana and oat base keeps them soft and chewy, the caramel melts into a gooey center, and the dark chocolate coating adds that satisfying snap.
