Now let’s begin with a small food history lesson. This particular pear cake was named after the Queen of England and wife of King Henry VI. Marguerite d’Anjou.

I would say that the Marguerite d'Anjou pear cake is one of the most famous old school French desserts, it’s up there for me with the mighty Tarte Tatin and delectable Creme Brulee. Since this leaves a very delicate taste as it melts in the mouth, it is crucial you serve this with a high quality rich creme fraiche. The sharpness & creaminess of the creme fraiche marries perfectly with the light slightly almondy cake & sweet pears.
